This Healthy BBQ Meatloaf recipe screams comfort food! Your meatloaf, potatoes, and veggies all cook happily in one pot. While this recipe calls for turkey, but you can easily use ground beef. I love this for busy weeknights!

Ingredients for this BBQ Meatloaf

This recipe comes together quickly, and cooks in one pot!

  • Onions – The fiber in onions promotes good digestion.
  • Oats – Oat are naturally gluten free, but can be grown in fields that had grains containing gluten in them before. Purchasing Gluten Free oats means that the there was nothing with gluten planted where those oats were grown.
  • Eggs
  • Ground Turkey – You can use ground beef if that’s what you prefer.
  • Mini Potatoes – Said to help reduce inflammation and constipation.
  • Carrots – A particularly great source of beta carotene.
  • Green Beans – Did you know there is more that 130 varieties of green beans?
  • Paprika
  • Celery Seed
  • Garlic Powder
  • Dry Mustard
  • Tomato Sauce – Low Sodium
  • Worcestershire Sauce
  • Brown Sugar – The new Ultimate Portion Fix now allows sugar and brown sugar in moderation.

Recipe Tips

  • You can easily hide onions in this recipe by cutting them very small. Leave larger pieces if you like them to remain a little crunchy.
  • If you prefer mashed potatoes with your meatloaf, peel your potatoes before adding. When cook time is complete mash to desired texture. Add butter, salt and pepper to taste!
  • To cook meatloaf in the oven: Preheat oven to 350 degrees. Add meatloaf to shallow baking dish or loaf pan, top with BBQ sauce, and bake for 40 minutes or until internal temperature is 165º for ground turkey or 160º for ground beef.
  • You can easily customize the vegetables to your preference. To swap out carrots, find a vegetable with equal density and cooking time, like Brussels sprouts. To swap out green beans, find another vegetable with equal density and cooking time, like okra. If you’d like to replace the green beans with asparagus (it cooks fast!), don’t pressure cook after adding them, just place the lid on the pot and allow it to steam for a few minutes.

How to make this BBQ Meatloaf:

  1. To make the BBQ Seasoning: Combine paprika, celery seed, garlic powder, dry mustard, salt, and pepper. Set aside.
  2. To make the easy BBQ Sauce: Combine tomato sauce, Worcestershire sauce, and brown sugar in a small bowl and set aside.
  3. To make the meatloaf: Mix ground turkey, onions, oats, egg, salt and pepper in a large mixing bowl. Add BBQ seasoning and 1/2 cup of BBQ sauce. Combine ingredients with your hands until completely mixed.
  4. Add two cups water to the Instant Pot and place trivet on the bottom of the pot. 
  5. Place potatoes on the trivet.
  6. Make a “bowl” for the meatloaf with aluminum foil: Spray foil with oil so it won’t stick to the food. Place it on top of potatoes off to one side of the pot. Top Meatloaf with remaining BBQ sauce. You can see a picture of this below.
  7. Make a “bowl” for the carrots with aluminum foil: Spray foil with oil so it won’t stick to the food. Place it on top of potatoes next to the meatloaf. Add butter, salt and pepper, or anything else you’d like to season your carrots with.
  8. Close and lock the lid and turn the valve to sealing. Select Pressure Cook and set the cook time for 15 minutes. 
  9. Make a large “bowl” for the green beans with aluminum foil: Spray foil with oil so it won’t stick to the food. This should be big enough to cover the entire inside of the pot–it’ll be placed on top of the cooked meatloaf and carrots after they’re finished cooking.
  10. Once cooking is complete, quick release the pressure and remove the lid. Quick release means that you move the valve from Sealing to Venting and steam will shoot out of the valve–watch your hands :)
  11. Place green bean bowl on top of the cooked meatloaf and carrots, close lid and set cook time for 2 minutes. 
  12. When cook time is finished, quick release the pressure and carefully remove green beans, meatloaf, carrots, and potatoes from the pot.

How to make this recipe in the oven:

  • Preheat oven to 350 degrees
  • Follow steps 1-3 to prepare meatloaf.
  • Place meat mixture into a loaf pan.
  • Add vegetables and potatoes to a sprayed baking dish.
  • Bake for 40 minutes or until internal temperature shows it is done: 165 for ground turkey and 160 for ground beef.

This easy, one pot BBQ meatloaf recipe is perfect for a busy week night. Meatloaf, potatoes, and veggies all cook together in your Instant Pot or electric pressure cooker. Gluten free, dairy free, and so delicious.

Equipment

  • Mixing Bowls
  • Ninja Foodi

Ingredients 

Meatloaf

  • 1 lb ground turkey
  • 1/2 cup onion
  • 1/2 cup oats
  • 1 egg

BBQ Seasoning

  • 1 tbsp smoked paprika
  • 3/4 tsp celery seed
  • 1 t sp garlic powder
  • 1 tsp dry mustard
  • salt to taste
  • pepper to taste

Easy BBQ Sauce

  • 1 cup tomato sauce Low Sodium
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp brown sugar

Sides

  • 2 cups mini potatoes
  • 1 1/2 cups carrots
  • 1 pound green beans raw

Instructions

  • Combine paprika, celery seed, garlic powder, dry mustard, and salt and pepper. Remove 1.5 tablespoons of the seasoning and set aside. 1 tbsp smoked paprika, 3/4 tsp celery seed, 1 t sp garlic powder, 1 tsp dry mustard, salt, pepper
  • Combine tomato sauce, Worcestershire sauce, brown sugar, and the rest of the BBQ seasoning into a small bowl. 1 cup tomato sauce, 1 tbsp Worcestershire Sauce , 2 tbsp brown sugar.
  • Mix ground turkey, onions, oats, egg, salt and pepper, and the 1.5 tablespoons of BBQ seasoning that you set aside in a large bowl. Add 1/2 cup of BBQ sauce to the meatloaf mixture. The rest will be added to the top of the meatloaf. 1 lb ground turkey, 1/2 cup onion, 1/2 cup oats, 1 egg, salt, pepper
  • Add 1 1/2 cups water to the Instant Pot and place trivet on the bottom of the pot.
  • Place potatoes on the trivet. 2 cups mini potatoes
  • Make a “bowl” for the meatloaf with aluminum foil. Be sure to spray the foil with oil so the meatloaf doesn't stick.

  • Make a "bowl" for the carrots like you did for the meatloaf and place it next to the meatloaf. 1 1/2 cups carrots
  • Close and lock the lid and turn the valve to sealing. Select Pressure Cook and set the cook time for 15 minutes.
  • Make a large “bowl” for the green beans with aluminum foil. This can be big–the size of the pot. 1 pound green beans
  • Once cooking is complete, quick release the pressure and remove the lid.
  • Remove the lid and add the green beans to the top of the pot (on top of the meatloaf and carrots). Add the lid and set pressure cook time to 1 minute.
  • When cook time is finished, quick release the pressure and carefully remove green beans, meatloaf, carrots, and potatoes from the pot.
  • Enjoy!
