This easy Instant Pot Baked Oatmeal is a healthy and tasty way to start the day!

Baked oatmeal is a hearty cake-like oatmeal. It contains eggs and has a firmer texture than traditional oatmeal. People who don’t normally care for the texture of regular oatmeal tend to love this baked oatmeal recipe.

Oatmeal is a heart healthy way to start your day. I prefer this recipe over any overnight oats I’ve tried before. This healthy baked oatmeal recipe contains no refined sugar like brown sugar, but instead uses maple syrup to sweeten it.

Oatmeal is a whole grain and is a great source of fiber and slow burning carbs, so it will keep you feeling full for longer than other foods.

I love the smell of apple cinnamon oatmeal, and love the heartiness of baked oatmeal–with this recipe, you can eat it now or make a batch to save it for later, and it still tastes the same–delicious. This delicious recipe makes the perfect grab and go breakfast option with your cup of coffee.

Ingredients in Instant Pot Baked Oatmeal

  • Oats: I prefer rolled oats for this recipe. However old-fashioned oats can work if you only have these on hand. Instant oats tend to yield a more sticky and gooey baked oatmeal.
  • Almond Milk: We prefer unsweetened almond milk.
  • Baking powder: Helps the oatmeal to achieve its texture and allows it to rise more
  • Cinnamon
  • Vanilla extract
  • Maple syrup: I use pure maple syrup. The fewer ingredients on the label, the better.
  • Eggs: These help the oatmeal with the thick muffin-like texture.
  • Apples: Apples add a wonderful taste and sweetness to this baked oats recipe.

How to make Instant Pot Baked Oatmeal in the Instant Pot

  1. Prepare your pot: Add 2 cups of water to the pot and set trivet at the bottom. Spray the inside of your mason jars, coffee mugs, or large ramekins with oil.
  2. Add your ingredients – both dry ingredients and wet ingredients: Combine all of the ingredients together and mix well with a spoon. You can also add all of the ingredients into a bowl and transfer the oat mixture to the jars one by one.
  3. Add oatmeal cups to pot: Be careful to set them down flat so they don’t tip over.
  4. Cook for 10 minutes: Close and lock the lid, set the cooking time on high pressure for 10 minutes. When cook time is done, quick release the pressure. Then remove the lid and carefully lift out the oatmeal cups.
  5. Enjoy: Add extra syrup, sliced bananas or other fruit like fresh berries, peanut butter, chocolate chips, or any other favorite toppings.

Recipe tips

  • The great thing about this recipe is that it yields to individual servings easily. You can, however, easily double this delicious breakfast recipe. To cook a big batch and make oatmeal bars, use an Instant Pot safe baking dish and cook up to 8 servings at a time. Baking time for 8 servings is 20 minutes. To gather the correct ingredient amounts, scroll down to the recipe card below and tap the serving number, then use the slider to increase the serving amounts.
  • Allowing this recipe to naturally release is not a problem. It will be ready when the cook time is over but can easily stay in the pot for a bit if you’re running around and can’t remove it right away.

  • If you have any leftover oatmeal, store in an airtight container and refrigerate for up to a week.

It's always a good morning when you can enjoy freshly baked oatmeal–especially when it’s apple cinnamon flavored. Cooking Instant Pot Baked Oatmeal makes my morning so much easier–I love that with a pressure cooker, you don’t have to babysit your food while you cook it.

Equipment

  • Instant Pot 6 qt
  • Sealing Rings
  • Kitchen Knife

Ingredients 

  • coconut oil spray optional
  • 1/2 cup oats I prefer rolled oats for this recipe.
  • 1/3 cup almond milk or coconut
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 tsp maple syrup (optional)
  • 1 egg
  • 1/4 cup diced apples optional

  2. I am very interested in many of your recipes but I do not have an Instant Pot. Could you offer alternative cooking options for them or does that conflict with your agreement with the Instant Pot company?

    1. Hi sheila! I try to add traditional cooking directions to most of the recipes, sometimes it takes an entire day of testing to get the second method so I can’t do it. I don’t work with Instant Pot, it’s just a super popular method of cooking right now!

      I’ll definitely try to be better about this :)

    1. I’m sure you can use a substitute, but I haven’t done it yet!

    1. I keep them in the fridge for up to 4 days! You can freeze them too!

  7. What kind of oatmeal do you usually use?

    1. The Quaker Old Fashioned oats in the big tub!

  8. Thanks for the recipe! Mine turned out dry and a little bland, but I left out the syrup since I was trying to be good and it said “optional.” 😊 Would that make all the difference? Or should I add more milk/water when I make it? Or would I do quick release instead natural if it’s too dry? Sorry for all the questions! I love this idea so want to make it work. 😃

  9. I love that you include eggs. I never seem satisfied when I just have oatmeal. I am going to try adding more apple though. I am going to try with a whole apple for 2 mugs and see what happens! Or have you tried it and it doesn’t work? I want to get more purple (fruit) for the day.

    1. Same with the eggs! I find them more filling.

      You can definitely adjust the apple to your liking and needs–the recipe has worked great for me when I’ve added more!

    May I ask, what is the purpose of the egg, aside from the nutritional value? I just can’t imagine putting egg in my oatmeal. If I leave it out, any idea how that might affect the consistency or cook time? Thanks!

    1. Hey Debi!

      It’s baked oatmeal, not traditional. The egg helps to give the dish a hearty cake-like texture. If you leave it out I’d expect the oatmeal might be a little drier, and don’t know about the cook time–I cant imagine it would change.

    Love this! I have been eating it for breakfast since I found the recipe. I will admit I’m not a 21 day fix gal, so I add some sweetness. I add 1 T of brown sugar and a small amount of Stevia sweetener. It’s perfect for my sweet tooth this way. It’s very filling with the egg as protein. Thanks for the recipe. 😁

  13. What if I dont have an instant pot ?

    1. You can bake these at 350. I’d check after 20 minutes and every 5 minutes after.

  14. How are these only 50 calories especially when there’s an egg in it? An egg alone is about 70 calories.

    1. Hi Gina! Yes, these aren’t always 100% accurate, which is why I have a note about calculating them yourself if it’s important to you. I’ve recalculated this manually and the nutrition information is correct now :) Thanks for letting me know!

    Would their be a time change if you used steel cut oats. I am not a fan of old fashioned and just giving steel cut a try, as so many say they prefer.

    I am looking forward to trying this but cooking in a coffee cup makes me nervous that it would crack or break under this extreme heat. Has anyone had problems with that happening?

    I considered my glass Anchor Hocking small bowls but it does not say anything about up to what heat. It only says no stove top, microwave safe.

    I considered ramekins that are oven safe, but only hold 9 oz.

    Advise on type of coffee cup or other containers others are using please.

    Along with my question of container material and size for cooking the Apple Oatmeal breakfast, on your site you recommend a 4 oz ramekin. A serving of oatmeal is 1 c. add the apple and egg, it would be a little larger than a cup cooked. This seems like a cooking container that is too small for a serving. Am I missing something?

    1. Hi there! I don’t recommend a 4oz ramekin, just a ramekin. The general rule with the IP is that if it’s oven safe, it’s safe for the IP :)

  18. Can I use cow’s milk? Is almond or coconut a better alternative?

    1. Dairy shouldn’t go in the Instant Pot, that’s why I use the non-dairy milks!
