This Sweet Stuffed Acorn Squash recipe is a delicious and healthy treat that you’ll feel good about eating. This is an easy 21 Day Fix and Weight Watchers dessert recipe that will curb your cravings while still staying on track!
Baked acorn squash is rich in nutrients and this recipe uses clean ingredients – no butter and brown sugar here! A perfect fall dessert or side dish that you’re going to love.

Ingredients
- Acorn squash: acorn squash is a winter squash that resembles, you guessed it, an acorn. This nutrient dense vegetable is a great source of Vitamins A and C, as well as fiber, potassium and magnesium. It’s super versatile and delicious!
- Apple: pick your favorite type!
- Cranberries: this is optional but I like to add dried cranberries if my containers and/or points allow for it.
- Coconut sugar: look for coconut sugar or coconut crystals. If you can’t find them, use another approved sweetener, or omit if you prefer.
- Cinnamon
- Coconut oil
Directions
- Preheat your oven to 350 degrees F.
- On a cutting board, cut the acorn squash in half, length wise. Use a spoon to scrape and scoop out the seeds.
- Pour ¼ inch of boiling water into a baking dish. Add squash halves to the dish, skin side up.
- Place your dish into the oven and bake for 30 minutes.
- In a large bowl, combine the diced apples, cranberries, cinnamon, and oil.
- Remove the squash after the cook time is completed, and turn the squash halves over.
- For extra sweetness, sprinkle coconut crystals onto the squash halves before adding the mixture. (this step is optional)
- Stuff each acorn squash half with the apple mixture.
- Return the squash to the oven and bake for an additional 30-35 minutes, or until the squash and apples are tender.

This easy WW dessert recipe is low in points! Calculations below are per serving and using 1 tsp coconut oil and omitting the cranberries.

- 4 tbsp cranberries optional, dried
- 1 tsp cinnamon
- 1 tbsp coconut oil
- 2 tsp coconut sugar coconut crystals, or other approved sweetener

Sounds good, but instructions are confusing. It says to bake the 1/4″ of water in the dish for 30 minutes…..do I just assume the squash goes into the dish too and then I bake it for 30 minutes?

Did I miss the oven temp? I’m using my phone, so that may be the issue.
