Hi Kayla,
Yes, you can mix cooked quinoa into the Instant Pot after everything is done cooking. Or you can serve the jambalaya on top of cooked quinoa- whichever you prefer :)

You could TOTALLY make this a freezer pack (like prep everything ahead of time and just toss it in the pot)!! Because that pretty much what I did lol. What I had on hand when the quarantine hit was onions and celery (that I diced up and froze) along with Turkey Kielbasa and it all turned out GREAT!! I did cook up the frozen shrimp separately since I made it first thing in the morning and didn’t want the shrimp to over cook. I was out of quinoa so cooked up some brown rice in the Instant Pot and that was SO MUCH EASIER!!!! Thanks so much for the recipes!!!

About 1 cup, but I’d divide the recipe into six servings before you eat any to make sure ;) The different sized veggies, shrimp, etc could impact the final serving sizes.
