One thing I love most about fall is pumpkins! Well, even more than pumpkins… pumpkin seeds! They’re delicious, easy to make, and they never last very long in my kitchen. Today I’m sharing one of my favorite ways to prepare pumpkin seeds–spiced and roasted!
Spiced Roasted Pumpkin Seeds Recipe
Ingredients
- clean and dry pumpkin seeds
- coconut oil
- pumpkin spice (1t cinnamon, 1/4t nutmeg, 1/4t clove, 1/4t ginger, 1/4t allspice) or just 2t cinnamon if you prefer.
- salt (optional)
Directions
1. Preheat oven to 400 degrees.
2. Add coconut oil to seeds by mixing in a bowl or placing seeds directly on a lined baking tray and drizzling with the oil.
3. Sprinkle pumpkin spice onto the seeds and roast for 5-10 minutes, stirring halfway through. Look for seeds to take on a golden color.
4. If adding salt, sprinkle it on immediately after you’ve removed the seeds from the oven.

- 2 teaspoons pumpkin spice 1t cinnamon, 1/4t nutmeg, 1/4t clove, 1/4t ginger, 1/4t allspice or just 2 teaspoons cinnamon if you prefer.
Optional: salt to taste
Instructions
